Who turns down an invitation to a soirée at Park City's chicest new dining hot spot? Not me. 

Last week I attended a dinner at Spruce, the restaurant inside the luxurious new Dakota Moutain Lodge, part of the Waldorf-Astoria Collection, located at the base of The Canyons Resort.

As snow began to fall outside, I took my seat near a roaring fireplace in one of Spruce's dining rooms, settling right into the cushy saddle leather chair, and admired the restaurant's glamorous interior. The room is swathed in deep chocolate mohair and velvet. Talk about rustic-chic.

For the evening's feast, chef Mark Sullivan and his chef de cuisine, Sandra Middleton, prepared a six-course tasting menu focusing on seasonal ingredients from local famers. After a hearty meal including root vegetable soup, rainbow trout and pan-roasted elk, topped off with more than a few warm, doughy, sugar-coated beignets drenched in huckleberry caramel, plum compote and creme anglaise, I was happy, stuffed and beyond satisfied. The only thing that equalled the amazing meal was the setting itself.

Spruce features two private dining rooms which seat 24 people and 16 people, making it an ideal location for intimate engagement dinners or rehearsal dinners. Let the celebrations begin!
